If I turn on the demist the windscreen immediately fogs up absolutely solid before slowly clearing.

It's incredibly dangerous and after a near miss I never now press demist unless parked up

Is it something to with the A/C system?

That sounds scary. I never experienced that before.

It is! Total white out in seconds. It has to be an A/C thing.
Hope someone knowledgeable would chime in.
Does it have a sickeningly sweet aroma? If you wiped with a white paper towel, is the mist tinted pink? P.s. I think you'll fit in better calling your cab a vert. I mean, it's not a Volkswagen, right??? 😅😂

It's just plain old condensation.
Well to explain, it can be a few possibilities. One is a leak in the heater core or some other source of extra water in the inside of the car. In my wife’s 05 conv I have to use a product on the canvas top every few years to fix the waterproofing as the rear footwells get wet. A little canvas treatment and good, all dry.

so first question do you smell coolant (smells sweet) or other water in car? If so fix that.

If not the main way the car normally fixes that is the ac compressor is on most times (even in the winter) to dry out the air in the car to prevent fog ups. Is you r ac blowing cold when you turn the temp down?
A/C is ok, no coolant leaks, I think it may be as people suggest, the cabin filter is blocked or damp.
